This refreshing cocktail is a mix of cucumber water, gin, lime juice and simple syrup. Although you could make it into a regular strength cocktail, it is super refreshing as a low-alcohol cocktail, with only one ounce of gin.
Cucumber water on its own is a really delicious summertime drink. All you need to do is fill a pitcher with water, cut up a cucumber into slices and let it sit overnight. In the morning, scoop out the cucumbers and toss them out.
You now have cucumber water! It'll last in the fridge for a couple of days. It's also great to use in ice pops!
Cucumber as Garnish
Obviously a cucumber is the way to go to garnish this drink, but there are loads of ways you can use it. You can cut a round slice of the cucumber, then cut a slit in it and stick it on the rim of the glass. You can also cut a bunch of thin round slices, and stick them down into the glass to be held in place by the ice.
Rather than cut round slices, for these photos I used a peeler to make a thin strip all the way down the length of the cucumber. Then, I carefully stuck it in a spiral down the side of the highball glass, creating a curve and movement.
Ideally, you'll have a bunch of ice to fill the glass and hold the cucumber in place.
Building the Drink
Because we're using lime juice, we'll build this drink in a cocktail shaker. First, juice the lime. I find that using a juicer press is a great way to juice lemons and limes and produces the cleanest juice (by which I mean without any bitterness from the peel). This is my favorite juicer because the gears makes it easier for me to squeeze.
Next, add in the gin and simple syrup. You don't have to use sage simple syrup, you can use plain, but the sage gives it an extra pop that I love. You can find the recipe for sage simple syrup in the story highlights of my Instagram profile.
Then, add in the cucumber water and some ice, and shake everything up. Strain it into your prepared cocktail glass and serve immediately.
Making It Your Own
This drink opens up tons of possibilities for you to get creative. You can double the gin to make it more boozy. You can switch out the gin and use vodka, or omit the alcohol altogether and make it an agua fresca.
You might want to cut up some strawberries to add to the cucumber water, and garnish your final drink with strawberries too. There are tons of possibilities and I'd love to hear how you changed things up!

Cucumber Gin Cocktail (Low Alcohol)
- Highball cocktail glass
- Cocktail shaker and strainer
- Citrus press juicer
- Vegetable peeler (optional)
- 1 fl oz gin
- 1 fl oz lime juice
- 1 fl oz sage simple syrup see notes (1)
- 3 fl oz cucumber water see notes (2)
- Make a strip of cucumber using a vegetable peeler and stick it around the side of your highball glass. Fill the glass with ice.
- Add the gin, lime juice, sage simple syrup and cucumber water to a cocktail shaker.
- Add ice and shake until chilled.
- Strain into the highball glass and serve immediately.
