This dragonfruit mojito might be my favorite mojito ever, and I'm even surprising myself, because I thought passionfruit mojitos couldn't be beat! The dragonfruit has a touch of sweetness and tartness, but with an overall mild flavor which lets the mint, lime and rum shine through too.
A bit about dragonfruit
I've known about dragonfruit, also known as pitaya, for a while, but it wasn't until recently that I was able to get my hands on one at the grocery store. These are the things I get excited about... new produce!
Since I'd never had one, I looked up some tasting notes and was surprised that it was a mild-flavored fruit. Kind of like a mix between a pear and a kiwi. My family and I all really enjoyed some of it, but then I hoarded the rest for cocktails!
Making the mojito
As soon as I tasted the fruit, I knew I'd be making this into a mojito! If there is a more refreshing drink than a dragonfruit mojito, please tell me, because I haven't found it yet.
The seeds inside the fruit are like kiwi seeds, just giving some added crunch and texture. They're much smaller than blackberry seeds, and are much easier to chew or just swallow. (I think of them as nature's sprinkles.)
Making a mojito is pretty simple, and you don't even need to dirty extra glasses. Just combine the fruit, lime juice, simple syrup, and rum in a highball glass. Add ice and mint, top with club soda and give it a quick stir.
When I muddled the dragonfruit slices in the bottom of the glass, I left the skin on so the drink could take on some of that beautiful color. I took the skin pieces out, but you could just as easily leave them in. Of course, just be sure to wash it really well either way.
You don't need to muddle the mint with the dragonfruit. You'll need to really mash the fruit, and the mint only needs a little bit of coaxing, otherwise it could end up giving off some bitter notes. Just slap it between your palms a couple of times and add it before the club soda.

- Cocktail shaker
- Cocktail strainer
- 1-2 slices dragonfruit, cut into pieces, plus 1 whole for garnish
- 2 oz white rum
- 1 oz simple syrup
- 1 oz lime juice
- 2 sprigs mint
- club soda
- Muddle the dragonfruit in the bottom of your highball glass. You'll be serving this in the same glass you are mixing in.
- If you want, remove the pink skins, and then add the rum, simple syrup and lime juice.
- Slap the mint between your palms a couple times to release the aroma, and add it to your drink.
- Fill the glass with ice and top with club soda.
- Cut a slit in the dragonfruit you've reserved for garnish, and sit it on the rim of the glass.
